1 1⁄2 cups of desiccated coconut
12 pitted dates
1⁄2 cup of cashews
zest of 2 oranges
juice of 1⁄2 an orange
zest of 2 lemons
1 tsp vanilla bean paste
1/2 tsp cinnamon
1 tbsp maple
2 scoops of Bondi Protein citrus collagen protein powder
a pinch of salt


  1. Combine all the ingredients in food processor reserving 1⁄4 cup of desiccated coconut and zest of 1⁄2 an orange.
  2. Blitz until a wet sand like texture.
  3. Roll the mixture into 15 balls.
  4. In a flat plate combine reserved coconut and orange zest.
  5. Roll the balls in the coconut orange zest mixture.
  6. Leave to firm up in the fridge for an hour
