1.5 Cups Almond Meal
100g Desiccated coconut + more for rolling
1 Orange (Medium sized) Zest & Juice
150g Dried Apricots (Chop before adding to the food processor)
2 Serves Bondi Protein Collagen Mixed Berry
1 Tbsp Olive Oil or Coco Oil
1 Tbsp Maple Syrup
- Combine all dry ingredients in a food processor
- Squeeze the orange into a bowl and add the other wet ingredients
- Process the dry ingredients until well combined
- Move the processed ingredients into a bowl and add the wet mix
- Using your hands, mix well.
- Refrigerate for 20 mins before rolling.
- Using a table spoon, spoon mix into your hands and squeeze the mix together.
- Roll into ball and then in coconut.
- Refrigerate again and enjoy!
