Makes 2 jars
Ingredients:
240 ml unsweetened plain oat milk (1 cup)
18g chia seeds (1 ½ tbsp)
64g natural smooth cashew butter (substitute for any nut butter)
30ml maple syrup (substitute for coconut sugar or honey)
90g rolled oats
20g BP vegan protein powder
Toppings:
Sliced banana, blueberries, raspberries, paw paw, strawberries
Granola
Toasted buckwheat
Nuts
Method:
- To a mason jar or small bowl with a lid, add almond milk, chia seeds, peanut butter, and maple syrup and stir with a spoon to combine. The peanut butter doesn’t need to be completely mixed with the oat milk
- Add oats and protein powder and fold through. Press the oats into the liquid to ensure it is moistened and immersed in milk.
- Cover securely with a lid or seal and set in the refrigerator overnight to soak.
- The next day, open and enjoy as is or garnish with desired toppings.
