Makes 350g

Ingredients:

180g whole oats
80g apple puree
100g coconut oil
80ml maple syrup (substitute for honey or rice malt syrup)
½ tsp ground cinnamon
½ tsp sea salt
1 tsp vanilla bean paste
2 scoops (40g) vegan BP protein powder

¼ cup goji berries
¼ cup currants (or sultanas)
¼ cup golden raisin
¼ cup cranberries
¼ cup raw almonds
¼ cup raw cashews
¼ cup raw walnuts
¼ cup pistachios

Method:

  1. Preheat the oven to 150C.
  2. Place a small saucepan over medium heat and add in the apple puree, coconut oil, maple syrup and protein powder and combine.
  3. Place the mixture into a large mixing bowl and add in the rest of the ingredients. Mix in the cinnamon, salt, vanilla paste and the fruits and nuts together using
  4. your hands making sure everything is coated.
  5. Pour the mixture out onto a lined baking sheet and bake in the oven for 40-45 mins until golden brown.
  6. Serve with milk, yoghurt or just snack on its own!!
