Makes 350g
Ingredients:
180g whole oats
80g apple puree
100g coconut oil
80ml maple syrup (substitute for honey or rice malt syrup)
½ tsp ground cinnamon
½ tsp sea salt
1 tsp vanilla bean paste
2 scoops (40g) vegan BP protein powder
¼ cup goji berries
¼ cup currants (or sultanas)
¼ cup golden raisin
¼ cup cranberries
¼ cup raw almonds
¼ cup raw cashews
¼ cup raw walnuts
¼ cup pistachios
Method:
- Preheat the oven to 150C.
- Place a small saucepan over medium heat and add in the apple puree, coconut oil, maple syrup and protein powder and combine.
- Place the mixture into a large mixing bowl and add in the rest of the ingredients. Mix in the cinnamon, salt, vanilla paste and the fruits and nuts together using
- your hands making sure everything is coated.
- Pour the mixture out onto a lined baking sheet and bake in the oven for 40-45 mins until golden brown.
- Serve with milk, yoghurt or just snack on its own!!
