Makes 6


300g strawberries, hulled
¼ cup maple syrup
2 cups desiccated coconut
60g Vanilla protein powder
¼ cup coconut oil, melted
600g white chocolate


  1. Add the strawberries, maple syrup, desiccated coconut, protein powder and coconut oil in a food processor and blitz to form a thick paste.
  2. Press the mixture into a baking tray and freeze for 30 mins.
  3. In the meantime, melt the white chocolate in a double boiler over until melted. Remove the slice from the freezer and pour the chocolate all over the slice. Allow to set in the fridge then flip it over and do the same on the other side.
  4. Place it back in the fridge or freezer to harden for another hour before breaking apart and serving.
