Ingredients:

Base
1 cup desiccated coconut
1/4 cup crushed peanuts
1/4 cup smooth peanut butter
1/4 cup chocolate BP powder
1 tbsp of cocoa powder
2 tablespoons maple syrup

Middle

1/2 cup smooth peanut butter
1/4 cup maple syrup
1/4 cup coconut oil

Top

60 grams dark vegan chocolate, melted
1 tablespoon smooth peanut butter
1 tablespoon maple syrup

Method:

  1. Place the base ingredients into your processor and blend until the mixture resembles a fine crumb. Press the mixture firmly into the silicone muffin molds. You can use a baking tray to make this if you don’t have silicone molds.
  2. Place the middle layer ingredients into a heat proof bowl and gently heat until the coconut oil has melted and the peanut butter has softened. Pour the mixture over your base and place the slice in the fridge for an hour to 1.5 hours to set.
  3. Once set, place the ingredients for the top layer into a bowl and mix to combine. Pour this layer evenly over your base and return the slice to the fridge for 30 minutes to set.
