Ingredients:

1 1/2 cup almond meal
1/2 cup shredded coconut (Extra half cup for rolling)
1/2 cup coconut oil, melted
2 scoops vegan vanilla protein
4 tabs maple syrup
1 lemon zested
2 lemons juiced
1 Vanilla bean
1 pinch sea salt

Method:

  1. In a large bowl combine all dry ingredients and mix.
  2. Add wet ingredients and work with hands to form dough.
  3. Roll into balls ensuring the mix is well pressed and shaped to avoid cracking.
  4. Roll in coconut and refrigerate for 30 mins until set.
  5. Store in an airtight container in the fridge for up to 2 weeks.
