Ingredients:
1 1/2 cup almond meal
1/2 cup shredded coconut (Extra half cup for rolling)
1/2 cup coconut oil, melted
2 scoops vegan vanilla protein
4 tabs maple syrup
1 lemon zested
2 lemons juiced
1 Vanilla bean
1 pinch sea salt
Method:
- In a large bowl combine all dry ingredients and mix.
- Add wet ingredients and work with hands to form dough.
- Roll into balls ensuring the mix is well pressed and shaped to avoid cracking.
- Roll in coconut and refrigerate for 30 mins until set.
- Store in an airtight container in the fridge for up to 2 weeks.
